Every Saturday we cook 15 dozen of eggs for the homeless. When I am in New York my son or me are doing the job of cooking the eggs. Lately we have an addition : tuna salad. We have the mayonaise and the celery sticks, parsley and white onions We clean it and put it in a food processor. Drain the water out. We are making 3 aluminium containers with tuna salad. Using three large cans of tuna 4 + lbs ( 1.88 kilos). My wife takes them with the eggs to the homeless shelter at St Bart on 51st and Park Avenue right across the Waldorf(!).
